Vodka Marinara
A classic marinara sauce with a twist. Tomato, garlic and basil with the smooth, sweet warmth of vibrant vodka

- 2 tbsp Olive oil
- 1 large Onion (finely chopped)
- 2 cloves Garlic (finely chopped)
- 1 pinch Chilli flakes (optional)
- 3 can Chopped tomato
- 2 tsp Sugar
- 90 ml Vodka
- 10-15 leaves Fresh basil
- 600 grams Pasta (your favourite shape)
- 150 grams Parmesan (to serve)
To make
Over a medium heat, warm the oil then add the onions. Add a pinch of salt and cover. Soften for around 5 minutes, stirring frequently
Add the garlic (and chilli flakes if using) and cook for 2 minutes, stirring occasionally
Add tomato, sugar and ¾ of the basil leaves and bring to the simmer. Reduce the heat to low and simmer for 1 hour
After 45 minutes cook your pasta
Pour the vodka into the sauce and add salt and pepper to your taste
Add the pasta to the sauce and mix well
