Ingredients
  

  • 900 grams Baby (or small) potatoes (Cut in half)
  • 3 tbsp Olive oil
  • 170 grams Parmesan (Finely grated)
  • 1 tsp Garlic powder
  • 1 tsp Thyme (Fresh or dried)
  • 1 tsp Rosemary (Fresh or dried)
  • ½ tsp Paprika (Optional - use, omit or replace with a flavour of your choice)

Instructions
 

Prep

  • Pre heat the oven to 220℃
  • Rinse and half the potatoes. Place them in a large bowl
  • Weigh/ Measure the ingredients

To Make

  • To the potatoes add half of the oil, the garlic powder, dried herbs and paprika (if using). Stir well
  • Sprinkle ¾ of the parmesan evenly across the base of the glass baking dish or roasting pan
  • One by one, place the potatoes cut side down into the cheese. Fill up one layer of the dish/ tray, packing in the potato
  • Sprinkle the rest of the cheese on top. Cook for approximately 30 minutes until golden brown. Remove from oven to cool for 5 minutes

To Serve

  • Using a spatula or a knife, cut between every few potatoes and serve them base up, with the parmesan crust on top
