- 2 litres Vegetable stock
- 120 grams Miso paste
- 800 gram Ramen noodles
- 2 cloves Garlic (Finely sliced)
- 5 cm Fresh ginger (Peeled and finely sliced)
- 2 tbsp Brown sugar
- 3 Carrots (Grated)
- 200 grams Sweetcorn
- 200 grams Beanshoots
- 200 grams Bamboo shoots
- 2 Bok choy (Sliced)
To Make
Add your stock to a large stock pot and warm over a medium high heat. Add the miso paste when bubbling and mix well. Add the garlic, ginger and sugar and stir. Bring to a simmer for 5 minutes
In a clean bowl, cover the noodles with boiling water and stir occasionally until cooked (Follow instructions on the packet)
Add the carrots and sweetcorn. Return to a slow simmer for 3 minutes
Add the beansprouts and bamboo shoots. Return to a slow simmer for 3 minutes
Add the bok choy. Return to a slow simmer
To Serve
Separate the noodles into warmed serving bowls
Spoon over the broth and vegetables
Garnish with perhaps sliced spring onion or sesame seeds or for a kick of chilli heat try the Fire Sauce Chilli Oil recipe (See Recipe Notes)
