Ingredients
  

  • 6-8 Peppers (Red, yellow or orange but not green)
  • 8 Chicken thighs (Boneless)

Instructions
 

Prep

  • Deseed the peppers and chop into generous chunks
  • Cut each chicken thigh into 2 or 3 large chunks

To Make

  • Heat a little oil in the pot over a medium high heat and brown the chicken. Stir frequently
  • Reduce heat to medium and add the peppers, mix well. Cook for around 10 minutes, stirring occasionally until the peppers suddenly release their juice.
  • Reduce the heat to low, place on the lid and cook for 30 minutes. Stir occasionally

To Serve

  • The choice is yours! Serve in a bowl on its own, with boiled rice or with a delicious french bread to mop up those juices
