Homemade Berry Frozen Yogurt
A low guilt frozen delight with a hit of your favourite berries

- 480 grams Greek yogurt (Full fat is best)
- 1 tsp Vanilla extract
- 100 g Honey (Or 120 g caster/ superfine sugar)
- 250 grams Berries (fresh or frozen, whatever berries you like, see recipe notes)
To Make
Place all of the ingredients, except the berries, into a large bowl and hand whisk well for 2-3 minutes. Alternatively, use a food mixer or a stick blender with a whisk attachment and mix for 1 minute on a medium high speed
Add your fruit and briefly stir again till mixed through
If using an ice cream maker, follow the user guidelines for best result then either eat immediately or place in a resealable, freezer-safe container and store in the freezer
If making this recipe without an ice cream maker, scrape the mixed ingredients into a resealable, freezer-safe container and place in the freezer for 30 minutes. After the 30 minutes, remove and mix well with a spatula or spoon making sure to scrape down the sides of the container. Repeat this process every 30 minutes until the desired consistency is reached. Serve immediately or store in freezer
- If using berries with lots of seeds, like raspberries, I would advise briefly blitzing them in a blender (or in a bowl with a fork) and then passing them through a sieve to remove the seeds. Push them through the sieve with the back of a spoon into a clean bowl prior to mixing with the other ingredients. Remember to scrape the bottom of the sieve too to maximise the output from your fruit
- If using frozen berries with seeds, and you want to take the above step, either remove from the freezer 3-4 hours before to allow them to defrost, or heat them in a pan over a low heat until the berries collapse, pass them through a sieve and then allow to cool
- Regardless of what berries you have chosen I would suggest either giving them a quick blitz in a blender or mashing them roughly with a fork in a clean bowl. You can blitz the fruit till smooth to leave a finish like in the photo or leave chunks of fruit in the final dish if you prefer more fruit texture.
- Whatever recipe you are making, get into the habit of tasting it at various points. Just because a recipe says a dish should be a certain way doesn't mean you have to agree. After step 2 of the 'To Make' section, for instance, taste it. If you think it needs a little more honey or vanilla then add it here and mix again. The more experienced you get with any recipe or any style of cooking, the more you will trust your own palate. I'm a firm believer that when you make a recipe it becomes yours to adjust and play with. Sure, certain recipes require precise measurements for technical reasons but flavour is subjective and personal. Never be afraid to make a recipe your own or to use it as a starting point for an entirely new creation.
