Ingredients
  

  • 125 grams Bread (slightly stale is ok)
  • 1 tbsp Olive oil
  • ½ tsp Salt
  • pinch Black pepper
  • 2 tsp Basil or Oregano or Thyme
  • 20 grams Parmesan (Finely grated)

Prep

  • Weigh/ measure all ingredients

To Make

  • Blitz the bread to breadcrumbs in the blender
  • Add all the ingredients apart from the oil and blitz briefly till mixed
  • Heat the oil in a saucepan ,over a medium high heat Tip in the dry ingredient mix and cook, stirring or shaking the pan, until crispy and golden brown. Pour onto kitchen towel when crispy

To Serve

  • Sprinkle a little on each plated bowl of pasta or place in the middle of the table as you might with cheese
