Equipment

Ingredients
  

  • 2 tbsp Olive oil
  • 1 large Onion (finely chopped)
  • 2 cloves Garlic (finely chopped)
  • 1 pinch Chilli flakes (optional)
  • 3 can Chopped tomato
  • 2 tsp Sugar
  • 90 ml Vodka
  • 10-15 leaves Fresh basil
  • 600 grams Pasta (your favourite shape)
  • 150 grams Parmesan (to serve)

Instructions
 

Prep

  • Prepare vegetables as suggested
  • Weigh/ measure the other ingredients

To make

  • Over a medium heat, warm the oil then add the onions. Add a pinch of salt and cover. Soften for around 5 minutes, stirring frequently
  • Add the garlic (and chilli flakes if using) and cook for 2 minutes, stirring occasionally
  • Add tomato, sugar and ¾ of the basil leaves and bring to the simmer. Reduce the heat to low and simmer for 1 hour
  • After 45 minutes cook your pasta
  • Pour the vodka into the sauce and add salt and pepper to your taste
  • Add the pasta to the sauce and mix well

To serve
