Spaghetti all’ Arrabbiata Recipe
Spaghetti all’ Arrabbiata
Equipment
Ingredients
- 600 grams Pasta (I've used spaghetti but use your favourite)
- 3 tbsp Olive oil
- 3 cloves Garlic
- 1-2 tsp Chilli flakes
- 600 ml Passatta
- 2 tbsp Tomato puree
- 2 tsp Sugar
- 10-15 leaves Basil (Or 1 tbsp dried basil)
Instructions
Prep
- Mince or chop the garlic as finely as possible
- Weigh/ measure the ingredients
To Make
- Heat the oil over a medium high heat and add the garlic and half the chilli. Cook for 1 minute, stirring
- Add the tomato puree and stir for 1 minute. Add passatta and mix again. Heat to a slow simmer and reduce to low heat
- Add sugar and a pinch of salt and pepper, mix.
- Taste and at this point add the remaining chilli flakes if you wish Cook for 15 minutes, stirring occasionally
- Cook pasta according to the packet instructions
- If the sauce is too thick add some pasta water to your desired consistency. Tear or chop the basil at the last minute and add, with the pasta, to the sauce. Mix well, cook for 2-3 minutes
To Serve
- Serve with an optional garnish of fresh parsley
