Parmesan Crust Potatoes

Ingredients
- 900 grams Baby (or small) potatoes (Cut in half)
- 3 tbsp Olive oil
- 170 grams Parmesan (Finely grated)
- 1 tsp Garlic powder
- 1 tsp Thyme (Fresh or dried)
- 1 tsp Rosemary (Fresh or dried)
- ½ tsp Paprika (Optional – use, omit or replace with a flavour of your choice)
Instructions
Prep
- Pre heat the oven to 220℃
- Rinse and half the potatoes. Place them in a large bowl
- Weigh/ Measure the ingredients
To Make
- To the potatoes add half of the oil, the garlic powder, dried herbs and paprika (if using). Stir well
- Sprinkle ¾ of the parmesan evenly across the base of the glass baking dish or roasting pan
- One by one, place the potatoes cut side down into the cheese. Fill up one layer of the dish/ tray, packing in the potato
- Sprinkle the rest of the cheese on top. Cook for approximately 30 minutes until golden brown. Remove from oven to cool for 5 minutes
To Serve
- Using a spatula or a knife, cut between every few potatoes and serve them base up, with the parmesan crust on top
