- 1 Stock pot Large, lidded and heavy bottomed
Ingredients
- 6-8 Peppers (Red, yellow or orange but not green)
- 8 Chicken thighs (Boneless)

- Deseed the peppers and chop into generous chunks
- Cut each chicken thigh into 2 or 3 large chunks
To Make
- Heat a little oil in the pot over a medium high heat and brown the chicken. Stir frequently
- Reduce heat to medium and add the peppers, mix well. Cook for around 10 minutes, stirring occasionally until the peppers suddenly release their juice.
- Reduce the heat to low, place on the lid and cook for 30 minutes. Stir occasionally
