Miso Maple Leeks Recipe
Miso Maple Leeks
Equipment
- 1 Zester
Ingredients
- 1 tbsp Olive oil
- 2 Leeks
- 2 cloves Garlic
- 30 grams Miso paste
- 30 grams Maple syrup
- 1 lime Lime juice
- 200 ml Vegetable or Chicken stock
- 1 good pinch Salt
- 2 tsp Chilli flakes (Optional)
Instructions
Prep
- Rinse the leeks under a cold tap and pat dry
- Remove the root and cut the leek into rounds about 1.5 inches/ 3.5 cms wide
- Finely chop or crush the garlic
- Zest the lime with your zester then juice it and place both to the side
To make
- Add the garlic, miso paste, maple syrup, lime juice, warm stock and salt and mix well
- Warm the oil on a medium high heat and lay the leeks cut side down in the pan with the lid off. Cook until they begin to caramelise then turn them once and lower the heat to medium
- Allow this side a minute or two then add then mixed glaze to the pan. Reduce the heat to medium low and place on the lid for 5-7 minutes
- Check with the tip of a knife at 5 minutes to test for a tender and flavourful doneness
To serve
- Plate individually or in a bowl as a side dish to share. Garnish with the lemon zest and the chilli flakes to your own taste and enjoy!
