My Visit
In 2015 I was lucky enough to get a reservation when the restaurant reopened. Without doubt it’s the single most important and memorable meal I’ve ever eaten. The food was extraordinary but even more than that was the atmosphere created by the subtle bombardment of the senses that were woven into the design of the meal. The experience was otherworldly. Impossibly intricate ideas blended with excellence of culinary execution. Plate after plate of individual artistic masterpieces flowing together to form an overarching experience.
I cannot put into words the immersive nature of this meal. It totally changed my perception of what is possible. The food itself was faultless and endlessly creative but the feelings invoked in every one of my senses through the course of the meal were of a level I thought impossible previously. I do not exaggerate when I say it was life changing.

Everyone has their own favourite version of this dish so I’m not going to be so controversial as to say you should ditch yours for this recipe. The spiced butter alone is a tip that I now use often in a variety of recipes. This is a damn fine recipe but if you choose to use all or some of the recipe, it’s a beautiful example of how the thoughts of a Michelin star chef can be transferred to the everyday cook and used in everyday cooking
