Equipment

Ingredients
  

Dry Ingredients

  • 250 grams Plain (All purpose flour)
  • 1 tsp Baking soda (Or 3 tsp baking powder)
  • ½ tsp Salt
  • ½ tsp Ground cinnamon

Wet Ingredients

  • 150 grams Brown sugar
  • 120 grams Butter Plus a little extra to butter the tin (Softened to room temperature)
  • 2 large Eggs
  • 80 grams Yogurt/ Sour cream/ Cream
  • 450 grams Mashed banana (Around 4 medium bananas)
  • 1 tsp Vanilla paste

Instructions
 

Prep

  • Pre heat oven to 350℉/ 180℃/ 160 fan
  • Weigh/ measure your ingredients
  • Mash your bananas well
  • Lightly butter the inside of your bread tin

To Make

  • Place your measured dry ingredients in a bowl and mix briefly
  • Place the butter and brown sugar in a separate bowl and using the whisk, mix well until smooth and creamy, this won't take long
  • Add the eggs and whisk well
  • Add the rest of the wet ingredients and mix well
  • Slowly add the dry ingredients to the wet, whisking well until they are combined. Make sure there are no pockets of dry flour left
  • Place your bread tin on your oven tray. Pour in your batter and place on a low shelf in the pre heated oven
  • Bake for approximately 60 minutes. You might want to cover the banana bread with foil after 30 minutes to protect the top. When cooked, the top will have probably cracked and a cocktail stick will come out dry and relatively crumb free when you poke the centre of the bread

To Serve

  • Serve as a slice of cake with a tea or coffee, toast and lather with butter or even serve with a scoop of vanilla ice cream as a dessert. Alternatively, use the banana bread to make a delicious banana bread and butter pudding.
