Lemon Zest Pasta Topping
Equipment
- 1 Frying pan (Heavy bottomed)
- 1 Zester
Ingredients
- 125 grams Bread
- 2 tbsp Olive oil
- 2 Lemons (Zested)
- ½ tsp Salt
- ¼ tsp Pepper
- 2 tsp Mixed herbs (Could be Italian seasoning, a Herbs de Provence or a mix of dried basil, rosemary or thyme)
Instructions
Prep
- Zest your lemons using the zester. Alternatively, scrape the lemon with the end of a fork. You want all yellow and no white and may even need to finely chop it
- Weigh/ measure all ingredients
To Make
- Blitz the bread to breadcrumbs in the blender
- Add all the ingredients apart from the oil and blitz briefly till mixed
- In the frying pan, warm half of the oil over a medium high heat. Tip in the dry ingredient mix and cook, stirring or shaking the pan constantly, until crispy and golden brown. Add a little more oil as you go, if needed
- Add the juice of half a lemon before the breadcrumb turns brown to add an extra zing to the topper. Allow it to burn away while stirring
- Place to the side on a warmed plate lined with kitchen roll
To Serve
- Sprinkle a little on each plated bowl of pasta or place in the middle of the table as you might with grated cheese
