Ingredients
  

  • 125 grams Bread
  • 2 tbsp Olive oil
  • 4 cloves Garlic (Chopped roughly)
  • 20 grams Fresh parsley (Chopped finely)
  • 1 tsp Dried oregano
  • 1 tsp Salt

Instructions
 

Prep

  • Weigh/ measure all ingredients

To Make

  • Blitz the bread to breadcrumbs in the food processor
  • Add the garlic and blitz briefly
  • Add all the other ingredients apart from the oil and blitz until well mixed
  • In the frying pan, warm half of the oil over a medium high heat. Tip in the dry ingredient mix and cook, stirring or shaking the pan, until crispy and golden brown. Be careful not to burn the garlic as it will become bitter. Add a little more oil as you go, if needed
  • Place to the side on a warmed plate lined with kitchen roll

To Serve

  • Sprinkle a little on top of each plated bowl of pasta or place in the middle of the table as you might with grated cheese
